Hungry Stylist: Berry British Baked Cheesecake

A dessert fit for our Queen

This cheesecake certainly hit all of the spots at our Rocking Jubilee Dinner party last night.

Wham bam, thank you Ma'am.

Remember when I said forget about calories in my Big Fat Diet Secret? Well there's never a better time to start than with this cake. Seriously, notching up the calories in this bad boy will result in you never eating again. 

As I was cooking for six guests, four of whom were gentlemen I decided to make this beautiful dessert as naughty as possible. 

The secret to this diamond of a dessert are the surprising chunks of white chocolate and the sharp taste of the raspberries running through the creamy cheese mixture.

Berry British Baked Cheesecake


Ingredients
300g White Chocolate Chunk cookies (I used Sainsbury's Taste the Difference White Chocolate Cookies )
50g melted butter
600g full-fat cream cheese
2 Tbsp plain flour
175g golden caster sugar
2 eggs, plus 1 yolk
150ml soured cream
200g raspberries
100g white chocolate 
1 bag of frozen mixed berries 
2 Tbsp of icing sugar

Instructions

  1. Heat the oven to 180C/fan 160C/gas 4. Crush the cookies in a food processor (or put them in a plastic bag and bash with a rolling pin). Mix with the melted butter and press into a 9inch spring-form tin, create a small lip around the edge. Bake for 5 minutes. cool.
  2. Beat the cream cheese with the flour, sugar, vanilla extract, eggs, one yolk and soured cream until light and fluffy. Stir in the white chocolate and half the raspberries and pour into the tin. Bake for 40 minutes and then check - it should be set but slightly wobbly in the centre. Leave in the tin to cool completely, then chill in fridge for at least 2 hours.
  3. Just before serving put a handful of frozen berries in a saucepan with the icing sugar until hot. Take off the heat and squash through a sieve.
  4. Serve a slab of the cake with a drizzle of compote and a spoonful of defrosted frozen mixed berries.
